A dead fryer takes half the menu with it, and it is the single most common equipment failure in a small kitchen. Try a quick fix first

Check the high limit reset before you call anyone. A fryer that tripped on high limit often comes straight back, and it costs nothing to press.
Look at the gas supply. If the range beside it is also weak, the problem is the gas line or the regulator rather than the fryer, and that part is licensed C-36 work.
Find the model and serial plate. Fryer parts are model specific, and the plate decides whether the technician arrives with the part or has to order it.
Check whether the unit is still under a manufacturer warranty or a service agreement. Warranty work has to go through the authorized dealer or you void it.
