Try a quick fix first
Some issues resolve without a truck roll. Two minutes now can save the callout.
Put an oven thermometer in it before you call. An oven that is simply out of calibration is a thermostat adjustment, and knowing the actual temperature saves a diagnostic visit.
Check whether one burner or all of them are weak. All of them means gas supply or regulator, and that is licensed plumbing work rather than an appliance repair.
Look at the door seal and the hinges. Heat escaping past a worn gasket is the commonest reason an oven cannot hold temperature, and it is a cheap part.
Record any fault code from a combi or programmable oven. Manufacturers publish them and it shortens the visit.
